
2 Ingredient Pancake Recipe
All you need for this recipe is just two ingredients, egg and banana!
These pancakes are naturally gluten free, protein packed and super healthy for those who can’t tolerate normal flour pancakes, or may want to try a lighter pancake but still feel full and satisfied throughout the day.
I was definitely not disappointed when I started making these. Nearly everything affected my stomach when I was unwell with my colitis, and I needed to make something nutritious and filling without the harmful ingredients triggering it, so when I tasted these, using only egg and banana, my taste buds were awakened with a sweet treat that I could finally enjoy.
To make this recipe you will need:
- 2 large eggs
- 1 medium banana
- Whey Protein Powder (optional)
- Blender
- Toppings of your choice (I like to use Greek yogurt and mixed berries on top with a little honey, but the choice is yours).
This makes enough for one person, depending on how much you like, you can adjust your ingredients based on your required portion size, for example 4 eggs for 2 people and 1 large banana etc.
Directions:
Add the eggs and banana into a blender and blend until smooth, add in protein powder if you like but this is completely optional. Once the mixture is blended, pour into hot frying pan with olive or coconut oil and serve with your desired toppings.
